Sausage Appetizer With an Eggroll Wrapper
There is something about the spicy flavor of sausage combined with the crunch of baked egg roll wrappers that appeals to kids and adults alike. You can make a quick appetizer with browned breakfast sausage and cheese, or kick it up a notch and go for spicy Italian or garlic and cheese sausage, and add vegetables to create give it a tasty twist. There's no need to worry about your rolling skills; these appetizers put a creative spin on eggroll wrappers with no rolling required.

Instructions
- Brown the sausage in a pan over medium heat until it is fully cooked. The type of sausage depends on your personal preferences, but any type should be cooked before combining it with other appetizer ingredients.
- Dice fresh vegetables such as green or red peppers, fresh tomatoes, onions or zucchini and summer squash. Use about 1/2 to 3/4 cup of diced veggies for every 1 pound of sausage to make 36 egg roll appetizers. For a Mexican twist, substitute black beans or whole kernel corn for all or part of the vegetables.
- Add about 1 cup of shredded cheese per pound of browned sausage. Choose shredded cheddar, Mexican or Italian blends or combine your favorite hard cheeses.
- Add the diced veggies and dressing or salsa to the mixture. Ranch dressing works well with breakfast sausage, but you may prefer creamy cucumber or another creamy dressing. For garlic and cheese or Italian sausage, try salsa or a creamy cheese sauce. Use about 1/2 cup of dressing or sauce per pound of sausage. Mix to blend the ingredients.
- Cut the egg roll wrappers into 4 equal sections.
- Place one section of the egg roll in each cup of a muffin pan. Push the egg roll wrapper down so that the bottom is flat and the edges extend from the top of the muffin cup. The egg roll wrappers will appear slightly ruffled along the sides.
- Bake the egg roll wrappers in the oven at 350 degrees Fahrenheit until they are golden brown and slightly crisp. This takes about 10 minutes.
- Fill the baked egg roll cups with the sausage and cheese mixture and bake at 350 F until the the filling is heated through and the cheese has melted.
Tips & Warnings
Avoid crunchy or hard vegetables, such as carrots and broccoli, unless you partially cook them first, as they may not have time to cook properly in the oven.
